- 2 salmon fillets
Mango salsa
- 1 mango, chopped
- 8 cherry tomatoes, cut in 4
- 1 red pepper, finely chopped
- 2 green onions, finely chopped
- ½ cup (60 mL) cilantro, chopped
- ½ jalapeno, seeded and chopped
- 1 C. (15 ml) olive oil
- 1 lime (zest and juice)
