Grilled Tex-Mex Salmon with Cauliflower Steaks and Mango Salsa

Ingredients and Quantities:

  • 1 cauliflower, cut into large slices
  • 3 tbsp. (45 mL) Tex-Mex spice
  • 2 tbsp. (30 mL) avocado oil
  • 2 salmon fillets

Mango salsa

  • 1 mango, chopped
  • 8 cherry tomatoes, cut in 4
  • 1 red pepper, finely chopped
  • 2 green onions, finely chopped
  • ½ cup (60 mL) cilantro, chopped
  • ½ jalapeno, seeded and chopped
  • 1 C. (15 ml) olive oil
  • 1 lime (zest and juice)
