Mini Oatmeal Peanut Butter Cups with Berries and Greek Yogurt Topping

Ingredients and Quantities:
Cuts
- 2 cups (500 ml) oats
- ½ cup (125 ml) unsweetened peanut butter
- 1 C. (15 mL) maple syrup
- 1 C. (5 ml) liquid vanilla
- 1 C. (5 ml) ground cinnamon
- 1 C. (5 ml) salt


Garnish
- 2 cups (500 ml) plain Greek yogurt
- 1 cup (250 ml) frozen field berries
- 1 scoop of protein powder isolate vanilla flavor (or protein powder of your choice)
- 1 C. (5 ml) liquid vanilla
- 2 tbsp. (10 ml) ground cinnamon
- ½ lemon (juice only)


Steps:
1. In a bowl, put all the ingredients for the cups. Mix well.


2. Divide the mixture among 12 muffin cups and press with your fingers to make cups (small bowls). Send to freezer for 15 minutes.


3. In another bowl, put the frozen fruit. Send in the microwave for 45 seconds to thaw.


4. Using a fork, mash the thawed fruit into a puree.


5. Add all other filling ingredients to the bowl. Mix well.


6. Garnish the cups with the Greek yogurt mixture. Return to freezer for 1 hour to set slightly. Take out and let cool for 15 minutes before eating.


FIT COOK tip:
When making the mini cups, equip yourself with a small bowl of water to soak your fingers.
Your wet hands will make this step easier, making your cooking experience
much nicer!
